Pickled Beetroot

Hello!
Sorry I have hardly dropped by recently. I have just run out of time and energy come the days end! Unbelievably constantly busy at the moment!!
I just thought I would share my pickled beetroot recipe since I was asked about it recently and couldn’t find a previous post where I had shared it before.
I am really enjoying it back in my salads again!

4-5 medium beetroots sliced
3/4 cup water
1&1/2 cups vinegar
3/4 cup sugar
1/2 teaspoon peppercorns
2 cloves (I use a half teaspoon of powdered cloves)
1 bayleaf (I skip this as I have none at the moment)
1/2 teaspoon mustard seeds
1/2 teaspoon cinnamon
1/4 teaspoon salt

Put all in pot and boil/simmer until beetroot tender.
Store in container in fridge with liquid covering the beetroots.

I usually just cut up however many beetroot I have and then double/triple the recipe until I have enough liquid covering the beetroot.

  1. Thanks for sharing the recipe. It sounds like the jars would keep for quite a while in the fridge with the vinegar in it. Do you get any bugs/worms boring into the beet roots? If so, how do you control that?

    1. No worries. Ruby has kept hers pretty much for a year with no problems!! I eat mine to quick to judge the time 😀
      So far I have had no problems with my beetroot so haven’t had to problem solve bugs!

      1. Will do! I’m excited to make it. I wanted to let you know that my kids and I planted our seed potatoes a few days ago! I ended up with more that could fit in my garden box, so the kids planted the extras all over the yard. With a bit of luck we should have lots of potatoes when it is harvest time. We planted yukon gold, huckleberry gold (a pretty purple one) and German butterball. Thank you again for your detailed instructions. I’ll keep you posted on the harvest. I really hope we get something!

        1. Fantastic that the potatoes are in!! I think its pretty hard not to get some kind of result… hopefully you will get a heap of lovely big potatoes in a few months! (Three for stealing a few new – 4-5 for full harvest!) They taste the best fresh out of the ground!!! Def. Let me know!
