Pikelet Recipe

Just in case someone wanted to know how to make up a batch of pikelets, here is the recipe I use:

1 cup self raising flour – sifted

pinch salt

1/2 teaspoon bicarb soda

2 tablespoons sugar

1 egg

1/2 cup sour milk (add a teaspoon vinegar to fresh milk or do what I do and just use normal milk!!)

1 dessert spoon of melted butter

Mix all ingredients into a smooth mixture. Dollop spoonfuls of batter on a heated non stick fry pan – flip and cook until golden

Serve hot with butter and your choice of jam etc… or just butter!
They are good cold too.

Wonderful for afternoon tea… but not so smart to eat almost a whole batch at 10pm… just so you know šŸ˜€

  1. Pikelet look like what we would call pancakes here in the U.S. I love pancakes with a little honey on them! Yummy!

    1. I think my pancake recipe is a little different… but haven’t made them in a while. This small version doesn’t need cutlery to eat them!
      I haven’t had honey on pancakes before. My fav way is to spread them with nutella, add banana and a scoop or three of ice cream! (Followed by several laps of the Anniversary Bay Hike lol)

    1. You are welcome – and I agree. Now that we do a lot of walking/hiking I know I can have a few more of these treats without it being a disaster! My trick is not to buy those kinds of things at the supermarket – if its not in the house I don’t scoff them. If I make something it takes a lot more time/effort so I am unlikely to go overboard! šŸ™‚
